Frozen Berry Cobbler

Frozen Berry Cobbler makes for an easy one-pot breakfast or dessert idea with just a few tweaks. Serve with a plate of eggs or glass of orange juice for a sweet breakfast treat, or a dollop of ice cream and cup of hot coffee for a dessert that feeds a crowd.

Frozen Berry Cobbler

I am definitely more of a sweet-tooth kind of eater. When it comes to dessert I love something sweet with a bit of acidity from fruit. When it comes to breakfast, I would usually rather have a fruit and carb based option compared to my husband who is all about the eggs and ground meat. One of the many benefits to having such a large family is that we can get away with having both on the table and no complaints.

This is also a winner of a dish being that it only takes one pot (or Dutch oven) to make it. Less dishes to dirty equals less dishes to clean. I can even make it at the same time as dinner and serve it as a dessert that night, and then serve leftovers in the morning for breakfast with no qualms about it. It really is just a great dish. There’s no other way to put it.

What is a cobbler?

To me, a cobbler is the lazy-man’s pie. I know that’s not technically right, but a cobbler is like a cross between a pie and a dump cake. Like with pie, you have only one layer. Except with a cobbler it’s a biscuit or cakey layer and it’s typically on the top instead of the bottom. With this particular cobbler I made, we give it a generous stir so that the biscuit mixture is incorporated throughout. But if you check out my Bourbon Fresh Peach Cobbler, you’ll notice there are more segregated layers with the sugar-dusted biscuit layer on top. Both are quite delicious and easy to make.

What berries to use?

A berry cobbler can use really any berries. You can use mixed berries, a select few varieties, frozen, fresh, or even canned. For this cobbler I had an abundance of frozen strawberries and blueberries thanks to my morning smoothies. But come late summer, you can bet I’ll be using fresh berries locally grown and picked to serve up a fresh version on a hot summer day, loaded with vanilla ice cream of course.

How to make this easy frozen berry cobbler (with video)

Step 1: Melt the butter in a microwave or right in the Dutch oven. Stir in the sugar until the butter is absorbed.

Step 2: Pour in the flour, baking powder, and milk. Stir again until a pancake type batter is formed.

Step 3: Add the cream cheese and frozen berries to the mix and stir well to incorporate. I find chopping the cream cheese into very small pieces and using pre-sliced or chopped fruit makes it easiest for incorporating and prevents wet spots from forming in the cobbler.

Quick and easy to put together as a one-pot breakfast or dessert, this frozen berry cobbler is sweet and filling. Minimal ingredients, minimal prep, and easy to adjust based on desired flavors.

  • 4 Tablespoons butter melted
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 4 Tablespoons cream cheese
  • 1 cup frozen strawberries sliced if possible
  • 1/2 cup frozen blueberries

Instructions

  • Pre-heat the oven to 350F. Melt the butter in a microwave or right in the Dutch oven. Stir in the sugar until the butter is absorbed.
  • Pour in the flour, baking powder, and milk. Stir again until a pancake type batter is formed.
  • Add the cream cheese and frozen berries to the mix and stir well to incorporate. I find chopping the cream cheese into very small pieces and using pre-sliced or chopped fruit makes it easiest for incorporating and prevents wet spots from forming in the cobbler. Bake at 350F for about 50 minutes, until cobbler dough is set.
