Avocado Fries are a delicious side dish or snack for those looking to satisfy those crispy cravings. Made with pork rinds and almond flour, this snack can be made low-carb and keto friendly!
Start by slicing the avocado in half length-wise. Remove the pit from the avocado, slice into 8 wedges, remove the outer skin, and set them aside. Preheat the oven to 400F.
Add the pork rinds to a blender and pulse until a panko-style breadcrumb is formed. Place into a large bowl, set aside.
Setup the dredging stations. One large bowl will hold the almond flour (or all-purpose for non-keto) and seasonings. The second large bowl will hold the whisked eggs. The third will hold the pork rind panko crumbs.
Two at a time dredge the avocado slices first in the almond flour mixture, followed by the egg wash, and lastly into the panko breadcrumbs. Set on a baking sheet until finished. Spray lightly with olive or avocado oil.
Bake the fries at 400F for 15 minutes, flipping halfway through.
While the avocado fries are baking, mix the sour cream and lime juice in a small bowl. Divide for personal dipping.
